Grapes are hand-harvested, gently stomped, and shortly skin macerated. The juice is then fermented with indigenous yeast and zero sulfur in stainless steel tanks. Bottled the following fall with zero addition of sulfur (15ppm SO2 total). Unfined and unfiltered.
