Tiago Sampaio takes the pomace of a few different cuvées that are going on at the winery, both whites and reds, and puts them in concert tanks, allowing them to ferment for 24 hours. After fermentation, the must is pressed and he gets a delicious Piquette at 5.5%. Single-serving, and perfect for the park picnic or at Sunday brunch.
