Croci's vines are planted on sandy limestone soils rich in fossilized seashell material and are farmed organically; everything is done by hand, including weeding and harvest. Campedello is the name of the site whose grapes go into this wine. The co-harvested, destemmed fruit undergoes 11-15 days of skin maceration in concrete tanks and is then lightly pressed. Fermentation is with natural yeasts in cement tank, where it spends about 8 months--during which it is usually racked twice--before being bottled. The wine finishes fermenting in bottle for a minimum of 10 months; it ends almost completely dry and is not disgorged or filtered.
