Federico Orsi’s biodynamic farm is located in the Emilia-Romagna region of Italy, just outside Bologna. They are a diverse farm, growing vegetables and raising pigs, in addition to their rows of vines. The ‘Posca Bianco’ is made from a blend of Albana, Pignoletto, and Malvasia, in varying amounts depending on the vintage. He also uses multiple different types of vessels for fermentation and aging, from concrete to oak to steel. Utilizing a solera-like method of aging, with topping off to prevent oxidation, the wine is complex yet refreshing, full of fruit and white flowers, but has a savory, slightly earthy finish.
